Guar Gum is obtained from the seeds of Cyamopsis tetragonolobus, an annual leguminous plant which is a native of the semi arid region of the Pak/Indo Sub-Continent. It is composed of galactan and mannan units combined through glycosidic linkages (galactomannan). Guar is a natural cold water soluble polymer, so it can be used as a thickener, stabilizer, viscofier, rheology control agent, bodying, clouding agent and for processing aid either alone or with other gums, hydrocolloids, starches etc.
